Mixed Veggie Salad - Meatless Monday
HEY GUYS! I'm so sorry I was M.I.A. for a couple weeks. What with this whole virus thing, I'm not working but I'm taking care of my elderly grandparents, and trying to keep my own family safe. So this was a bit on the back burner. But, I had time today and needed to eat, so here I am! This is a dish I used to make a lot when I worked a lot more and brought my lunch to work. It's super quick, it lasts a long time in the fridge if you use the right veggies, and it's a great way to GET your veggies. I'm not one who has all her recommended vitamins and stuff, so when I can boost up on them, it's a good day! So, I guess I'm calling this a Mixed Veggie Salad, not really sure what else to call it...Other than DELICIOUS!
INGREDIENTS -
Basically any veggies you like that are more on the firm side and can sit in the fridge for 4-5 days.
I used -
Chick peas - 1 Can
Corn - Half cup
Carrots - Half cup
Cucumber - Whole English cucumber
Green Onions - 4 stalks
Feta - 8 oz
Spinach - to taste
Ranch dressing - to taste
ASSEMBLY -
This is just so easy. Rinse and drain the chick peas, throw them in a big bowl. Add in the corn. I usually use canned corn, but this time I had frozen (Which actually tastes a lot better) and just boiled that real quick.
Then I just diced up the cucumber, threw that into the bowl. I used shredded carrots, but you can always cut them up yourself. Threw that in, cut up the feta, and that's it...
Once you've got all your ingredients in a bowl, just mix them up. And that's it!
Now, I'm sure you're wondering, 'But, Katlin, where's the spinach and ranch?!' and let me tell you worried fan! I put those in later! The veggies and cheese that I've already mixed are very hearty, and can be together for awhile before going soft. However, the spinach not so much, and the ranch will only expedite that. So, when I'm ready to eat, I dish out this mixture, tear up some spinach and add ranch! That's it! This dish is gluten free, and with a different dressing and no cheese/vegan cheese, it can be vegan! Great way to get protein with the chick peas, and get all your veggies in. Especially in the times we're in, vitamins and minerals are so important!
