Taco Rice and Beans

This is kind of a simple one, but it's delicious, and I feel like many people will have these ingredients already in their houses. Especially during this crisis happening in the world, I want everyone to be safe. So I present, Taco Beans and Rice.

INGREDIENTS

Rice
Onion
Beans (I prefer black in this case)
Taco Seasoning
Toppings of choice

First, we're gonna get our rice cooking. This is just like when we did it for the Fried Rice last week, however we want it fresh this time, obviously. So just repeat those steps

Next, cut up your onions to your preferred size. Get a sauce pan, add some oil or water if you prefer no fat. Allow the pan to heat up on medium heat and add in your onions, you can add salt if you want them to sweat out faster, but just let them go until mostly tender. 

After the onions are mostly cooked, go ahead and add in your beans. I like to keep the liquid they come in, it tends to have more flavor. Also add in all your seasonings now. I added taco seasoning, salt, pepper, and garlic powder. All up to you for the quantities. 

Simply give that a good stir, and since everything is cooked, you just want everything to marry together! So bring it up to a good boil, and let it simmer for a few minutes, after that, it's done! Put it over your fresh rice, and add whatever toppings you like. I love sour cream, cheese and lettuce, however I had no lettuce. Sad days.

I've been making this for years, every so often when I crave it and it's always good. With vegan cheese, and salsa or guacamole, it could easily be vegan! ENJOY!
