Vegan Crock Pot Chili - Meatless Monday
Okay, so y'all. I've made chili before. I've made crock pot chili before. But I've never made vegan chili before. And let me tell you, this chili was so good, you wouldn't even be able to TELL it's vegan. I can't quite say it's better than beef chili, but if you didn't tell someone, they'd never know!
INGREDIENTS
Meatless crumbles - I used Gardein, or you can absolutely leave these out, if you cannot have soy or simply don't like fake meat. Just add more beans to it, to make it bean chili.
Any type of beans you like, I used dark red kidney beans.
Tomato juice
Taco seasoning
Garlic salt to taste
Salt to taste
Pepper to taste
PREP
Spray crock pot with Pam or use a crock pot liner, but those scare me.
Cook your meatless crumbles according to the package, basically you just want them thawed so they don't water down your chili.
This is what mine looked like after I added the tomato juice and mixed it all together, I ended up using probably 2/3 of that bottle of juice. Maybe not even that much.
After that, it's essentially done. Everything is cooked, you just need to let it marry together and warm up. I had mine on high for about 3 hours, and it was hot and flavorful!

Those only need a few minutes, then just dump them into the crock pot. After that, simply dump and go. Dump in the entire can of beans, don't rinse them off! Then add in salt, pepper, and garlic salt to taste, and about a tablespoon of Taco seasoning, I like mine less on the taco side, so feel free to add more.
Now comes in the tomato juice, I like my chili on the chunkier side, so feel free to add as much or as little of the tomato juice as you like. Things tend to create more liquid in the crock pot, so whatever you add is pretty much what you'll get. If you like less tomato flavor, you can add vegetable broth or just some water. Totally up to you.

I topped mine with cheddar cheese, red onions and Fritos, but if you left out the cheese this would be completely vegan! (However, cheese makes it for sure)
Honestly, guys, this dish is so easy. All the ingredients are shelf stable, or in the freezer, and you can throw it together in minutes, and walk away and let it chill.
