Vegetarian Fried Rice - Meatless Monday
Okay, ya'll. This ones good. I know, I know. I say this every week, but truly. This is one of the few dishes that my meat loving boyfriend actually loves! In fact, it's in his top 3 dishes I make. Albeit, it usually has chicken in it, but I've made it like this before, too, and he's loved it even then!
Now, this may seem overwhelming, due to the pictures. But once you get the hang of it, it's the easier meal you can MAKE!
INGREDIENTS
Rice
Eggs
Veggies you like (I used onion and carrots)
Eggs
Soy sauce
Sesame Oil
Miran
Salt
Pepper
Garlic powder
Cayenne Pepper
THIS IS PROBABLY THE MOST IMPORTANT PART OF THIS RECIPE...USE OLD RICE. I know, weird. But you want to use rice you either cooked the day before, or like I did, cook it and let it sit in the fridge for a few hours. You want the rice to be dry, other wise it's too soft and become like mush when you fry it. This is absolutely IMPORTANT
RICE
I like rice cookers. I could never properly make rice before I got one, and it's lasted almost 5 years, and I use it A LOT. Now, always cook more rice than you think you need. This makes excellent left overs, and rice puffs up a lot. I like to rinse mine until the water runs clear before adding the cooking water, not too sure if it changes anything, but I do it.
Cook your rice according to either the rice cooker or bag directions, either way is fine! BUT LET IT SIT.
PREP
Cut up you veggies however you like, I like them fairly small so that they cook quickly.
Also, if your dog is as OBSESSED with carrots as mine is, you gotta treat em...
YAY COOKING TIME
Next, heat your largest frying pan to medium-high with a high temperature oil. I use canola oil.
Once the oil is heated, throw in the veggies you've chosen, basically just add a little salt and let them cook until they're done to your likeness. I like mine a little softer, and however you like them, cook them, because we're taking them out after this, and they're done cooking.
Once the veggies are to your liking, add your beaten eggs. You wanna lower you heat, because otherwise the eggs will cook too quickly and stick to your pan. AND IT SUCKS.
Cook the eggs until fully cooked, stirring every once in a while. Then remove everything from the pan.
Once that's out, add a little more oil to the pan and then add the rice.
I like to add a little water to the rice to help it break up easier. Just let it do its thing, keep breaking it up with a utensil.
We're getting close! Now, just add in the seasonings. For this amount of rice, which was probably 5 cups, I used a 1/4 cup of soy sauce, maybe a tablespoon of sesame oil and maybe half a tablespoon or miran. Then just salt, pepper, garlic and cayenne to taste. Stir that all in very well, this is all up to taste. I don't like soy sauce, so I use less, so you do you. Then, just add back in the egg and veggies, stir it all up, and you're done!
This is so delicious, gluten free (if you use tamari or coconut aminos), vegetarian, if you exclude the egg it's VEGAN! WHAT.
I served mine with some Yum Yum sauce, soooo good, and pickled radish. This is honestly so easy once you learn how to do it, and whenever I make rice, I always cook more and make fried rice. In fact, my boyfriend is disappointed that he ate before I finished this, because he loves it that much!
